I freakin love cucumbers.

 

Grated cucumber, with sliced cherry tomatoes, sliced black olives, finely sliced (like with a marionette) red onion, pepper and soy sauce - is my go to low cal snack/meal right now. 

 

Cucumber, beetroot, fennel and ginger smoothie is amazing for hydration and your immune system. 

 

Cucumber ribbons with finely grated carrot, teriyaki sauce and sesame seeds is also delicious.

I like Persian cucumbers myself. They're crunchy and have a little more substance, while still barely having any calories. Way superior to your standard cucumber. I'd even throw English cucumbers in that category but their overall size works against them in my opinion. Standard cucumbers are tolerable, but honestly not the best. I'll have them if someone else is making a salad/preparing them but if I'm using cucumbers its Persian only. But the main hype around cucumbers is that they're one of those super low calorie foods. One large cucumber is like 30-40 calories for the whole thing and it you cut it up, or grate, ribbon, noodle it whatever it will come out look looking like a substantial amount of food.

I loveee cucumbers but I've found that they can be really bitter and not good if they're overripe. At that point they're really great in smoothies or cleansing juices!

it's weird because i love the inside part of the cucumber but the skin is disgusting to me! so nasty and bitter even if i wash it! if i skin them, theyre great though :) i like to put lemon juice on them and some seasoned salt, let it marinate and boom theyre like chips! i also like them with things like hummus or other dips.

I don’t like cucumbers either but I’m not going to force myself to eat something that’s I think is gross just bc it’s low cal. I’d rather eat celery, or carrots. I guess the way to make cucumbers on their own taste good is by pickling them

I ate so much cucumber as a child that it just isn't appetizing to me a majority of the time but i loooove cucumber salad and its easy to make

I wonder if you'd have the same digestive issue if you peeled the cukes first? The skin could be too fibrous. Plus they tend to be waxed, depending on where you get them from--maybe you are reacting to that somehow.

 

I usually slice mine and load them up with spices, salt, and/or mustard. I don't know where you are located but they make a good vehicle for Toby's Lite Jalapeno spread if you can get it. It's only like 40 kCal per 2 tbsp, I think.

they are in-season, so more affordable at the moment than other veg.

 

I eat them whole as raw lunch on the go, or cube them and steam them with mushrooms ...to serve with brown rice/buckwheat.

For some reason my stomach cant digest them properly. Warning for too much information now but if I eat cucumber I burp that cucumber-taste for hours afterwards, it is crazy!!!

Wait...Is it not normal to burp cucumber air for hours after eating one? O.O

soak them in some acv (apple cider vinegar) with a little bit of onion and some pepper + salt 

let it soak in the fridge for a 1-7 days

makes yummy, low-call pickles :]]
