So, I never thought I'd come to this point. But at long last, I'm at a size I'm happy with and do not wish to get any thinner. HOWEVER, I still love to occasionally go on this Disney princess diet I made about a year ago just so I can feel like royalty for a couple weeks. I'm sure you've all seen diets like this before, where each day is a different princess and the food is in someway based on her film. Since I don't want to get any thinner, I've since adjusted it so that I should only maintain my weight.

 

Anyway, seeing as Cinderella's carriage was made from a pumpkin, you can guess what her day entails. This time around I decided to make pumpkin soup and pumpkin chocolate chip cookies (since I'll need something sweet later for Vanellope's day). Between the 2 recipes I need 1.25 cups of pumpkin puree. For some reason though, they didn't have it at either of the 2 grocery stores my mom usually shops at. I might've become a little persistent in my request, so when she finally found a store that sold them, she bought 6 15 oz cans. My mom is pretty awesome. But I now have a bit of a dilemma. I haven't got a clue what I'm going to do with the 5.5 cans I'll have left over. So, does anyone know any good pumpkin recipes? (Please?) 

 

P.S I'm not a fan of pumpkin pie, even before I went vegan.

I don’t have a recipe but you can use pumpkin in banana bread. My friend made some recently and it was super delicious :)

You can use it as a substitute for oil in baking, it’s good for dogs so if you have dogs you can add a scoop to their food, and I don’t have a recipe yet but I’m trying to figure out how to turn it into pasta sauce.

Oh I did see a thing somewhere where someone mixed it with cocoa powder and 0 cal sweetener to make something that kinda tasted like pumpkin brownie mix? (I don’t think they baked it)

I use pumpkin as a sub for oil in baking. It's great.

You can make super low cal pumpkin spice lattes.

It's great in oatmeal.

You can make soup with it.

Use it in pancakes, waffles, etc.

Pumpkin vegan cheese sauce is GREAT on veggies. (This is my go to cheese sauce but I don't use the butter) https://ohsheglows.c...n-cheeze-sauce/

Pumpkin butter with 0 cal sweetener instead of sugar.

Frosting? Haven't tried this, but I know you can make chocolate frosting out of sweet potatoes. This should work just as well?

Pumpkin as a sub for coconut milk to make curry sauces creamy.

Enchiladas? I've made these with sweet potato puree, but the sauce would be good with pumpkin as well. They were tasty! https://sweetpotatos...adas-video.html

Ohh with sage and a lot of garlic it's a really good pasta sauce!!

Today my dad came over because it’s my birthday and along with cookies he brought a bag filled with sliced pumpkin. The neighbors to my dad has pumpkins but the vine reached over onto my dads ground and a pumpkin grew on top of his garage. It made me laugh so much because that’s such a weird thing to have happen I thought.

Anyways I might try out some of the ideas in here now and just thought it was a funny coincidence.

But how do you even make your own pumpkin spice lol

~230 cal pumpkin spiced waffle recipe
1/2c rolled oats
1/2 banana
2 tbsp pumpkin
pumpkin pie spice
blend together and put in a waffle iron that you’ve sprayed with oil. cook, enjoy
since u have a lot to use though, i recommend using it in a smoothie with banana and some almond butter
