What do you eat on a plant based Low-FODMAP diet? Food staples? Meal ideas/ recipes? Tips?

*Plus if it’s low calorie and semi low carb

I’ve come up with the following but still lacking in ideas as you can see. I’m new to plant based eating

-Vegetable soups
-Vegetables... ?
-Chia pudding
-Tofu scramble
-Tofu and vegetables
-Oatmeal with soy milk
-Soy/coconut yoghurt and berries?
-Soy matcha latte (not a meal tho but it sounds healthy, I have real matcha powder at home )

*And btw I can’t have nuts

Here's an idea of a meal plan:

Breakfast:
Oatmeal + almond milk + strawberries + maple syrup

Lunch:
Quinoa salad, quinoa + tomato + cucumber + olive oil and lemon juice dressing

Dinner:
Vegan shepard's pie, veggie mince + mashed potato + vegan cheese

Snacks:
Carrot sticks,
Cucumber sticks,
Lowfodmap crakers,
Coconut yogurt + cut up lowfodmap fruit salad

Juice:
Cranberry juice,

I also make low fodmap pasta dishes with gluten free pasta & sauce

prevents me from going on this diet because... basically all my safe foods are high fodmap :(

163cm / 5'4

HW: 52kg / 115lbs

LW: 37kg / 82lbs
