I organize my list in terms of macros/types of food, and try to get some from each.
1) Protein: beans, veggie patties, tofu, etc
2) Carbs: oatmeal, bread, etc
3) Fats: flaxseed, avocado
4) Veggies
5) Fruit
6) Condiments

All sorts of veggies (spinach, eggplant, carrot, tomato, lettuce,...) and fruit (clementine, apple,...).
For protein, I buy lentils (less than 100kcal/100gr), but you could buy tofu,...
Depending on if you drink liquid calories, I'd recommend unsweetened oat milk 34kcal/100ml) or unsweetened soy milk (35kcal/100ml). Spices are great too to add more flavour to your dishes (paprika, turmeric, garlic powder,...).
For snacks, I usually just eat fruit, but you could buy soy-based yogurt or baby carrots. It's not safe for me anymore, but I used to buy a plain soy-based one that had a higher amount of proteins. You could also add frozen berries to add more flavour.

My diet might be a bit strange because I don't eat nuts, seeds, fruits high in sugar, or plants high in fat like coconuts and avocados. If you eat those things, then oatmeal and almond or soy milk would probably make nice additions to this list.

My pantry items and frozen foods tend to last me for many weeks, if not months because I buy them in bulk and use most items sparingly, so I primarily purchase fresh produce every week.
I usually have a green smoothie for breakfast, a sandwich and salad for lunch, and steamed or sauteed vegetables with seasoning or vegetable soup for dinner. Sometimes I make stuffed bell peppers, vegetable fried rice, or roasted potatoes with paprika. I generally avoid snacking, but if I'm really hungry, I will eat a Wasa cracker topped with some salsa, a mini orange, a mini pickle, or some applesauce.
