Slowly transferring to vegan you should just avoid dairy products and buy vegan ones (they're so much tastier anyway) and avoid eggs if you can.
Also make sure your mom also tastes your foods maybe that'll make her come around a little more, like my family did. When you live alone you have complete control over your own diet.

Ask your mom if you can cook a vegan meal to share with the family once a week. Pick tasty and nutritious recopies. This way you snd your mom get more comfortable with it and you build your vegan pantry. decrease the size of your animal based portions . Over the next couple months eat less of them. While increasing vegan foods.
