Ratatouille is really good! I'd suggest buying a mandolin slicer for this, though. Just use a premade tomato sauce and follow a recipe from there! I typically leave out butter and oil.

As far as easier veggie dishes, I'm very into buddha bowls and salads. The hardest part is finding a dressing or sauce that's low calorie.

I literally put so much garlic powder, pepper, miniscule amount of sea salt, No-Salt (for potassium), and a teeny bit of siracha.

Yummm.

Omg this is my specialty!
I like to play around with different seasonings like pepper, salt, oregano, garlic powder, onion powder, even curry spices. Adding a little bit of nutritional yeast for cheesiness or low cal butter also helps. Sometimes even a little squeeze of lemon juice makes them taste better.
If you like butternut squash, I usually buy that frozen and bake it. I just coat the pan with 0 cal cooking spray and sprinkle lots of cinnamon on the squash about halfway through roasting it! It’s so good especially when I can afford enough calories to add a little butter to it.

Either I sautΓ© them in water and then season them last step when the water evaporates orrr
My favorite way is to put them in a baking dish and spray them with 1cal per spray oil
And then sprinkle seasoning on top usually Cajun seasoning and chill flakes

charred/broiled brussels sprouts are my fav, i usually just make them w/ just salt and pepper, but they're also good with balsamic vinegar or pickled onions. in general i think roasting veggies always makes them 10x more flavorful and it's too easy to not do it tbh

Nutritional mf yeast. IYKYK. If you don’t, Google! It’s low-cal, has amazing nutritional benefits, & has a nutty-cheesy flavor.

Also.. hummus. I’ll put hummus on anything.
Garlic/onion powder. Taco seasoning. Trader Joe’s Gyoza sauce.

paprika is my shit. I have been putting a lot of it on stuff before sauteing it and being extremely satisfied by the glaze it forms.

lemon + small amount of oil + basil

garlic salt (+ parsley after cooking)

soy sauce + rice vinegar + ginger powder (or grated ginger) + chives. You don't need a lot of the soy sauce or rice vinegar since they're REALLY concentrated.

various broth powders like mushroom broth, vegetable broth, crab broth, beef broth.

Sounds odd, but adding some fruit can also make phenomenal vegetable combos. Sliced or diced sour apples goes great with starchy stuff, and pineapple can go great with savory. Cranberries are used in other dishes, too. You don't need a lot of fruit, just a bit more than a garnish-amount.

I also recently got a basic mandolin board and the ultra thin sliced vegetables take up flavor SUPER well. I use it a lot on bell pepper, carrots, zucchini, cucumbers, and onions. But my guess is any hard or semi-hard vegetable works with it, and it's SUPER fast at chopping things.

Just let me relapse without judgement

buy anything funky at dollar tree. lemon pepper spice my fav.

I second this!! Also Mrs Dash seasoning is super low calorie or no calorie I forget either way it's a win-win. OH!, and grilling or baking them. I used to make "vegetable soup" but it was just corn, peas and carrots in a bowl with salt, pepper and the tiniest bit of margerine.
