So I've been thinking about eating carrot cake for days now but the only store bought option is full of sh*t ingredients and I'd like to make it myself at home with healthy/vegan ingredients instead. I also want to make it as low cal as possible and preferably without/little oil (could use other type of fats instead maybe like nut butters/seeds etc.). Anyone knows any such recipe for carrot cake?:)

- whole wheat flour

- greek yogurt

- maple syrup

- carrots

- almond milk

- powdered sugar (for frosting - not much needed)

- vanilla, cinnamon, etc

mix the flour, yogurt, syrup, and milk into a bowl. fold in the carrots + spices once it's all mixed together. let bake for abt 30/40 mins.

frosting = more yogurt, powdered sugar, vanilla in a med. bowl.
