Some things I had recently:
Pumpkin Salad Bowl consisting of lettuce, tomato, cucumber and spring onion, cooked white rice and roasted pumpkin, chickpeas, mushrooms and tofu on top. Used some oil and spices for the veggies and tahini, lemon juice, balsamic vinegar and soy sauce for the salad. Oh and pumpkin seeds.

Then vegan Peanut Butter Brownies, 126 kcal a piece

Vegan Sushi variations, miso soup with more veggies added in, spring rolls

And a beloved snack of mine: banana with almond butter and hemp or flax seeds
