Stressed dealing with my shitty new manager at work. I injured my foot and she’s making me jump through a million hoops to come back, whereas before I was just able to come do admin work. She’s being so rude too. I don’t get PTO so I’m literally sitting at home losing money. I’m filing a complaint once I get a new job. If anyone knows legit ways to make money online in the meantime please lmk, I’m struggling so bad :/

I had such a filling meal for breakfast - will update with photo.

 

"Scrambled eggs":

  • 1/4 Cup of JustEgg vegan scramble
  • 66g of chopped mini bell peppers
  • 35g of sliced grape tomatoes
  • 1 teaspoon olive oil (can leave off)
  • Half a cup of spinach

Sauteed garlic spinach:

 

  • Half a cup of spinach
  • Tablespoon of garlic (honestly didn't need that much)
  • 1/4 Teaspoon of Olive Oil (tbh can leave off, wish I did)
  • 20g of sliced grape tomatoes 

 

Throw in a pan and that's itttt! JustEgg can be scrambled like regular eggs. 

All together - 231 calories and super filling. You can add other veggies (I would do mushrooms but I'm out atm) and take out the olive oil or make other substitutions to make it even lower.

It doesn't look great because the lighting was bad but the recipe was delicious. It was Vegan Cauliflower "Butter Chicken" with white rice and smoked tofu. The recipe is great, I just added extra chickpeas and carrots in for some variety.

Skipped breakfast today
Lunch: trenta cold brew with dark cocoa almond milk foam (50), 100g of green grapes (62)
Snack: unpictured vegan portobello jerky (81), pickle spear (5)
Dinner: roasted chickpeas with vegan feta, spinach, dill, lemon juice (235) and a lightlife vegan italian sausage on roasted garlic bread with raw, probiotic sauerkraut and spicy mustard (335)

Total: 768

Some things I had recently:

 

Pumpkin Salad Bowl consisting of lettuce, tomato, cucumber and spring onion, cooked white rice and roasted pumpkin, chickpeas, mushrooms and tofu on top. Used some oil and spices for the veggies and tahini, lemon juice, balsamic vinegar and soy sauce for the salad. Oh and pumpkin seeds.

This looks amazing. Have you got a recipe?

It's all from the frozen section of Trader Joe's :) The enchiladas have tofu and zucchini in them too. I used their riced cauliflower stir fry and cooked it until it was lightly charred then added some chopped spinach ta daaaa

This look so good!! How did you make the tempeh? xx

I slice or cube up the tempeh, let it sit in a marinade of soy sauce, brown sugar, rice vinegar, a bit of sesame oil, sambal/chili flakes, and minced garlic (I never measure anything out, I just season to taste (sugar if it's too hot, soy sauce if its too sweet, etc). To cook it I just saute until the marinade becomes thicker like a glaze :)
