That lentil soup looks so good! Can I ask for the recipe?
50g dry lentils, brown or green (or 1 can pre-cooked)
~25g carrot, chopped
~25g onion, chopped
~30g red or green pepper, chopped
2 garlic cloves, whole
About 700ml water
Optional 2-3 leaves of spinach or ramson leaves
1/2 tsp of each: salt, pepper, dried basil, dried oregano, dried thyme, dried savory
2 tsp paprika powder
2 ml oil or a bit of low-cal oil spray (necessary!)
1. Bring the water to a boil and add some salt and the vegetables. If the lentils are dried, add them too and let them cook.
2. About 20-30 minutes later, take a non-stick pan, heat up some oil/oil spray on it and "fry" the paprika powder on low heat.
3. Once the paprika darkens a bit (be careful not to burn it!), stir it around the pan so it can "fry" evenly and then add some of the water from the pot in the pan. The paprika serves as a thickener just like flour does, and it asborbs lots of water easily, so stir it in carefully.
4. Pour the paprika-water mixture from the pan to big pot, turn off the stove and stir the soup. If you leave it overnight in the fridge, it thickens a bit more.
