Baked sweet potato fries, black bean brown rice burger bite with garlic pepper paste, roasted chickpeas, kale with blueberry balsamic, radish.

Total 258kcal

The brown rice burger recipe is cheap+easy+erotic. lemme know if you want it.

Dinner for two. Sautéed kale, onion, beet greens, bell pepper, sweet potato with tofutti sour cream. Broccoli "noodles" (they were okay), pinto bean meatballs, roasted beets, and some avocado (on toast for him). About 300kcal, couldn't finish it.

holy FUCKK WHAT ARET HESE RECIPES

Ummm the peanut butter cookie, the quinoa cake, the avocado cookies are mine and I don't remember the first two lol. The cookies I designed for a restaurant so the batch is like 9Cups lmao. I'll try to make it smaller.
Also I have since changed that recipe to double chocolate chip :)

1 + 1/8 C flour
1.5 tsp baking powder
1/2C puréed avocado
1/2C raw sugar
2/3C vegan choc chips or chunks
1/2tsp vanilla
1/3C Cocoa powder
1/2C non dairy milk
1 tsp salt

1) oven at 325F
2) mix the baking powder and flour and chips
3) (you can use a processor or a fork or an immersion blender, I prefer the latter) purée the avocado wth the cocoa, sugar, salt, milk, and vanilla. The consistency should be like chocolate pudding (you can eat it like this too omg my coworkers used to fight for the pudding)
4) mix wet and dry
5) scoop onto lightly greased sheet into desired sizes, bake for 8-10mins

Done!

Now for avocado creme brûlée:

This recipe calls for condensed milk. I just made my own condensed soy milk. It worked great. Be patient with this recipe.

This site is great. I've adapted my scone recipe from here.


Scones:
(You can add flavoring or fruit or whatever as you like, this is my base recipe. Fruit won't change much but it will be a bit more moist. The lemon poppyseed was with 3TBS each of lemon zest and poppy seeds. You can also sub pumpkin for the banana in the fall:) )

2C AP flour
3/4C mashed ripe banana (like 1.5 med/large bananas)
1/4C non dairy milk
5 TBS solid coconut oil or earth balance (I prefer earth balance unless going for a coconut flavor)
1 tsp salt
1 TBS baking powder
1/3C sugar (optional based on your flavor choice/if you want to add a glaze you don't need them to be sweet tbh)

1) preheat oven to 425F
2) mash bananas, add non dairy milk, mix together
3) add sugar (if using) and salt to banana mixture, mix
***if you're adding vanilla or spices/flavorings I recommend adding them to banana mixture!!!***
4) in large bowl, whisk AP flour with baking powder
5) cut cold butter into flour (if you don't know what that means google it. :) it's an easy and fun process)
6) add liquid mixture to dry mixture, mix with a spoon/spatula
7) form into a ball, sprinkle some flour on table
8) flatten to 1.5" thick circle, cut into 6 or 8
9) separate pieces and place on lightly greased pan
10) bake until golden brown

Can I have the brown rice burger recipe?!


This recipe uses a whole can, you can change the amounts as you wish.
You'll need a food processor and a muffin tray.

2C cooked black beans (you can use dry beans but that takes a while, or a can of cooked beans)
1/2C uncooked brown rice
1/2 medium onion, diced
1/2 red or green bell pepper, diced.
Chili powder, cumin, salt

1) Cook rice until very soft. You can use minute-rice if you're impatient. Will take like half an hour.
2) Preheat oven to 350F
3) sauté onions (I use nonstick pans and add a little water to move them around) until they get a little brown, then add bell pepper and a pinch of salt and let it cook until bell peppers are tender.
4) open and drain can of beans, add to rice in processor. Might need a little water, but you don't want it to be soupy.
5) add bean and rice slurry to onion and bell pepper in mixing bowl.
6) 1 TBS each of chili powder and cumin. 1/2TBS salt. You can add more of each if you want. I put way more seasoning in.
7) mix. use spray or a little earth balance to coat muffin tray.
8) ladle mixture into muffin wells, should fit into 6 of them.
9) bake for about 20mins, or until desired crispness is achieved.

They should be 160kcal each, pretty much fat free.

Alternatively you can add chickpea flour to make them hold together well and cook patties in a pan but that's a little more calorific :P
That's how I was doing them when o wasn't counting calories of my recipes
