I believe you can make a low-calorie milk shake with plant-based protein powders which contain 1000% of your daily vitamins. I got a hemp protein powder from Trader Joe's and every 4 tablespoons is only 120 calories in total, for all 4 tablespoons and it meets all of my vitamin needs without making me feel defective. 

 

Lentil Pasta is also very good, and it is a personal safe food for me and can meet your micronutrient needs. And it tastes like normal pasta with a savory bean flavor!

IMPORTANT TIP: Protein powder or vitamin green powders tend to be low calorie. And tend to meet all of your vitamin and iron needs. I recently got pea protein powder from Trader Joe's, it 130 calories for two tablespoons, and has 20 grams of protein, low in carbs and sugar, and has a buttload of vitamins and nutrients. Would recommend it, and powders similar to it. 

 

A powder is also useful for those who are liquid fasting or just hate the feeling of eating solids.

There's a nutritional drink, ensure, that comes low cal, has protein, vitamins etc. highly recommend as a meal and is under 100cal, even if you only drink one once a week it's better than nothing!
